| Believe it or not, wine, not beer, is
ideal with Vietnamese food. You have to throw traditional Mediterranean
wine pairing ideas out the window. Ingredients such as nuoc mam (fish sauce),
peanut sauce, and caramel sauces require a different approach.
German rieslings, with their high acidity, balanced sweetness and low
alcohol, are a perfect match. They quell the heat, taste balanced with the dish,
and their zingy acidity will leave your palate feeling clean and refreshed.
Drier whites are fine, but only with dishes that aren't spicy or sweet.
Red wines, if soft, will taste reasonably well with many dishes. Remember
that all reds will taste harder than they really are with spicy food. Save your
big reds for barbeque or southern Mediterranean food. Wines that are high in
alcohol and tannin are pretty unpleasant with most Vietnamese
dishes.
